Regarding Observation 12630105 I got some change in the audio signal during the pass. As I am new to Satnoggs I would like to get some explanation if this change is a satellite based artefact or not.

In the middle of the pass you notice the DC part of the signal because no doppler correction is necessary at that point, I think you should set gain to 29.7 or something and re-run such observation. The waterfall shows no trace of any satellite in your case
